Many individuals are realizing they have food sensitivities or intolerances. The most common ingredients people react to include wheat/gluten, cow's milk (casein), and soy proteins. Other sensitivities are also common including nuts, egg, and fish/shellfish. My son is in the autistic spectrum, and benefits from a diet that avoids gluten, casein, and soy.
When we realized how much better Joshua did on the GFCF diet, I realized I needed to learn some new recipes and cooking techniques! In great part, I learned to cook again by reading a great blog from Karina's Kitchen called Gluten Free Goddess.
